THM Recipe: Pizza! (S)

Dear Reader,

This is an adaptation of the gluten-free recipe we were already using to make it THM friendly. It is also dairy, soy, and nut free.

THM Gluten-free Pizza

Crust:

Ingredients:

1 c coconut flour

1 1/2 c garbanzo bean flour

1 1/2 c flax seed meal

1 tbsp xantham gum

1 tsp salt

1 tbsp baking powder

1 tbsp oregano

2 tsp garlic powder

1/4 c olive oil

2 c almond milk

3-4 c water

Directions:

1. Preheat oven to 450. I recommend using a pizza stone if you have one. It make for  a less soggy crust. If you do, put it in the oven now to preheat. If you don’t have  a pizza stone, put a cookie sheet in the oven to preheat.

2. Mix dry ingredients.

3. Add wet ingredients and mix well. The resulting dough should be very moist and easy to spread. It is best with gluten free flours to let it rest 5 minutes and then to see if more liquid is needed; they tend to absorb it slowly over time.

4. Divide dough into 4 parts and spread each one out on a square of parchments paper. I found it was easiest to do this with my fingers. You could also try just spreading it with a rubber spatula or with another piece of parchment paper. I don’t recommend a rolling pin. It is a sticky, moist dough.

5. Place one pizza at a time, still on the parchment paper, on the preheated pizza stone (or cookie sheet). Bake 10 minutes or until the crust is set but not brown.

6. Remove from oven, top with sauce (see below) , cheese, whatever you like, return to oven and bake an additional 7 minutes.

Sauce:

Ingredients:

15 oz tomato sauce

1 tsp salt

1 tsp truvia or other sweetener

1 tsp paprika

1 tsp oregano

1 tsp parsley

1 tsp basil

Directions:

1. Mix all ingredients. That’s it!
